In Judy Stavisky’s wonderful book called IN PLAIN VIEW: the daily lives of Amish women, there is a recipe for an Amish pie that I just had to try!
It’s called “Snitz Pie for Church.”
Now, I had to tweak the recipe just a tiny bit to work for the ingredients I had on hand, but I think that goes along with the Amish sensibility! Basically, this is an applesauce pie, and since I didn’t have enough applesauce, I added some cubed apples into the mix, too. I also substituted some corn starch for the gelatine the recipe called for. If you want to see her recipe she included, you should definitely buy her book! But this is how I made it in my own kitchen.

Ingredients:
2 pie crusts
1 jar of applesauce
3 or 4 peeled and cubed apples
1 tbsp cinnamon
Dash of lemon juice
2 cups sugar
3 heaping tbsp corn starch
1/2 cup of water
3-4 tbsp of butter or cooking oil
Directions:
Stir up the ingredients together in a pot until the corn starch thickens, then put into pie crusts. Bake at 350F for 45 minutes.
It’s incredibly easy to make and uses a lot of the cheap ingredients of my local area. I will definitely be making Snitz pie again!
