When I was growing up, a family favorite meal in our home was Haystacks. When we had guests, we could feed a large number of people very easily, and everyone loved it. I didn’t even realize that the Amish eat this meal, too, until I stumbled across some descriptions of Amish cooking, and Haystacks were part of the fare!

Haystacks is basically a layered dish where everyone puts what they like on top of corn chips and chilli. The Amish recipes for Haystacks that I’ve seen start with crackers instead of corn chips, but then layer up in the same way.
You can feed an army (or a church group!) with this simple meal.
Here are the sorts of toppings we use in our family (which is very close to taco salad), and some more toppings that I’ve seen with some Amish recipes:
Chips or crackers (crackers seem to be an option for the Amish for a crunchy base for this meal)
Chilli or cooked ground beef
Lettuce
Tomatoes
Cucumbers
Shredded cheese
Sour cream
Salsa
Olives
Pickles
Salad dressing
Corn niblets
Spaghetti or rice (Amish)
This meal is tasty, filling and easy to make very large quantities! It comes highly recommended from our home.
