Leftover Chicken Pot Pie Recipe

After I make chicken dinner, we launch into the chicken dinner leftovers! And no one really wants reheated chicken dinner just like that. So this is one of my leftover meals that I like to make.

Chicken pot pie!

Really, it’s just chicken dinner in a pie crust! And it’s a great use for all that leftover gravy. (I always make a lot, and I’m the only huge gravy fan in the family.)

Yield: 2 pot pies

Ingredients:

Chicken
I’m not picky! Leftover chicken from a previous meal, or even just a couple of chicken breasts cut in to small pieces and fried up. Just make sure it’s cooked.

Gravy
Leftover gravy, or some gravy mixed up from a packet… You do you! In fact, if you’re using packaged gravy, use two packs. The more gravy, the better.

Veggies
Again… I’m not going to judge. Skip them entirely, or add in a sliced carrot. Whatever you like!

Potatoes
I’m going to have to insist upon these, because life isn’t worth living without potatoes. Peel and cube 2-3 small potatoes. You’ll be thankful you did.

Parsely
All minced up, if you’re feeling fancy.

Pie crust
About 2 cups of flour, a stick and a half of butter or butter substitute, forked together in a bowl. Then use 2-3 eggs for moisture, and mix it up into a dough! split it into thirds. (1/3 for in each pie plate for the base crust, and 1/3 will be used for topping later.)

Directions:

  1. Preheat the oven to 375F.
  2. Squash pie crust into the bottom of two pie plates. Honestly, the bottom crust doesn’t have to be pretty! I don’t even bother with a rolling pin. Just mash it in there with your fingers–it turns out just the same.
  3. Put the chicken, gravy, potatoes and veggies in a bowl. Mix them up well.
  4. Put the mixture into the unbaked pie shells
  5. Use left over crust for the top of the pies. I find it works well to roll out the last of it and use a cookie cutter to put cute shapes on top. That gives lots of space for gravy bubbling goodness. Plus, people assume you’re extremely talented because of the cute shapes–they can’t help but be impressed. 😉
  6. Bake for at least an hour at 375F. You want your potatoes to be soft when you stick them with a knife. When they are soft, your pot pie is done!

I’m not a fancy cook, but I do get the job done! It’s all about rolling up your sleeves and using up those leftovers.
