Delicious Chocolate Chex Marshmallow Squares

We are an allergy family, and I had a huge craving for some homemade Rice Crispy squares. But did you know that good old fashioned Rice Crispies have gluten in them?

I know! It’s both surprising and disappointing when all a girl wants is a nice gooey Rice Crispy square using the gluten-free marshmallows she just picked up.

So I decided to give them a try with a different kind of cereal. We use Chex cereal at home because it’s gluten-free and decently priced, so I used a box of Chocolate Chex cereal.

These are ugly, but delicious! And super easy!

Ingredients:

1 bag marshmallows

1 box Chex cereal (flavour of your choice)

3-4 tbsp butter or margarine

Directions:

Put the marshmallows in a large microwaveable bowl. Microwave them uncovered for about 3 minutes until they are nice an gooey.

Add in 2 tablespoons of butter or margarine and mix well.

Use the last tablespoon of butter or margarine to grease a 9 by 12 casserole dish.

Pour the cereal into the gooey marshmallows and mix it up. Then press the mixture into the pan (buttery fingers help here) and let it cool.

Cut into squares and eat!


Homemade doesn’t have to be hard! And there is a real pleasure in showing your family a nice new pan of something gooey and delicious. Did you know that even the Amish will find ways to make “homemade” easy? They’ll use jars of peanut butter, marshmallow fluff, and those sorts of things just to get something sweet and tasty made. So don’t feel bad about it!
