
Who says Christmas cookies have to be difficult? When my son was little, the one thing he wasn’t allergic to was peanuts. And I so wanted to make his Christmas special, so I used the only cookie recipe I had available to me at the time, and I made my peanut butter cookies into snowmen.
They’ve become a Christmas family staple! It just doesn’t feel like Christmas unless we’ve had some of these.
Also–they’re quick! Sometimes I can feel my family dragging a bit, needing a bit of cheering up for some reason or other, and these take twenty minutes, including the time in the oven!
Ingredients:
Peanut Butter– 1 1/2 cups
Salt–a dash
Sugar– 1 cup
Baking powder– 1 tsp
Eggs–2
Flour–2 tbsp
Directions:
Mix it up! Put some parchment paper on a cookie sheet. Then make them into balls in the shape of snowmen, and flatten them with a fork.
Bake at 350F for 12 minutes.
A dusting of powdered sugar would be pretty on top, too!
They are SO GOOD! Even better with a glass of milk! (Almond milk for us.)
