Easy Peasy Chicken Fingers

I love an easy meal! I’m a busy writer, and while I do get to work from home, when my head is in a book, you really don’t want me cooking. I tend to forget about what’s on the stove–it’s not a good thing!

With that in mind, I bring you the EASIEST chicken fingers this side of the store-bought variety. They have three ingredients.

Ingredients:

Chicken breast cut into strips

Bread crumbs (I use gluten-free)

Your favorite chicken seasoning! (I use Club House Montreal Chicken.)

Directions:

Mix a cup of bread crumbs with a tablespoon of chicken seasoning. Dip the strips of raw chicken into the bread crumbs, and then fry in oil!

I like to play fast and loose with my heart health, and I use about an inch of canola oil in a pan, but how much you use is up to you. These fingers are tender, moist, and absolutely delicious dipped in ketchup.
