When I’m working hard on a book, my cooking suffers. I focus more on quick meals and meals that will stretch. But then, after a week of cobbling together this and that for my family, I end up feeling a little guilty, and down right hungry!
That happened last week. By Friday, it was time for a proper meal. I pulled out a beef roast and made roast beef, mashed potatoes and veggies. Reader, we ate the entire roast in one sitting! I guess we were all hungry!

This is the roast before it went into the oven. I don’t have a proper beef roast recipe for you. I use steak seasoning on the raw meat, sear it in the bottom of the pan on all sides, put in water, bouillon, fresh herbs (thyme and rosemary) and onion. Oh, and salt. And then I stick it in the oven for two hours.
After two hours, I cut up the roast into slices, stick it back in the juices, and bake for another half hour. That gets all that flavour all through the meat, and it is to die for! You don’t even need gravy! (And those are strong words from a gravy lover here.)
Just in case you think that I cook this way every day. I don’t! I wish I could, but there is only so much time in a day. In fact, this summer, I’m going to pay my son to do the family cooking. I think it’s good experience in meal planning, grocery shopping and cooking skills. It also means I get two months off of kitchen duty! By the time I hit the kitchen again in September, I’m itching to do it my way again! 🙂
