Quiche-like and yummy!

Another favorite around here, are my “quiche-y things.” They aren’t exactly bite-sized quiche, but they’re close. They are incredibly simple to make, use very few ingredients, and I just love them! So do my guests. 🙂

Ingredients:

8 eggs
1 frozen package of spinach, thawed
1/2 cup water
1 onion diced
4 tbsp olive oil
2 heaping tsp salt

Sliced tomatoes

Breadcrumbs

Directions:

In a big bowl, mix together the eggs, spinach, water, onion, oil and salt.

In large muffin tins (I use silicone ones that are old, but work so well with these I refuse to retire them!), grease the inside with some oil, then fill each muffin opening with your egg mixture.

Add sliced tomatoes on top, then sprinkle with bread crumbs and another little sprinkle of salt.

Bake at 375F for 40 minutes, or until they are golden brown.

That’s it!

If you want to spruce them up, you could add cheese, but I keep mine dairy-free because of allergies.

  1. Love quiche, will try these soon.. I saute some zucchini and onion then mix in some eggs and let them cook, kinda like quiche without crust, easy for quick lunch
